Ingredients

  • 1 medium pumpkin, peeled and cubed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1/2 cup coconut milk (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the pumpkin cubes with olive oil, salt, and pepper, and spread them on a baking sheet.
  3. Roast the pumpkin in the oven for about 25-30 minutes, or until tender.
  4. In a large pot, sauté the onion and garlic until translucent.
  5. Add the roasted pumpkin, cinnamon, nutmeg, and ginger to the pot.
  6. Pour in the vegetable broth and bring to a boil.
  7. Reduce heat and simmer for 10 minutes.
  8. Blend the soup until smooth, adding coconut milk if desired.
  9. Serve warm, garnished with a sprinkle of cinnamon.
