- 1 cup of finely chopped spinach
- 1 cup of grated carrots
- 1 cup of diced bell peppers
- 1 cup of cooked quinoa

- 2 eggs

- 1 teaspoon of onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the chopped spinach, grated carrots, diced bell peppers, cooked quinoa, shredded cheese, eggs, garlic powder, onion powder, salt, and pepper.
- Mix until all ingredients are well combined.
- Grease a muffin tin and spoon the mixture into each cup.
- Bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving.
