  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add zucchini, bell pepper, and green beans; cook for 5 minutes.
  5. Pour in vegetable broth and diced tomatoes.
  6. Add thyme, basil, salt, and pepper; bring to a boil.
  7. Reduce heat and let simmer for 20-30 minutes.
  8. Adjust seasoning if necessary and serve hot, garnished with fresh parsley.
