Ingredients

- 1/2 cup cotija cheese, crumbled
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon Tajín seasoning
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- In a large bowl, combine the corn kernels, cotija cheese, mayonnaise, lime juice, and Tajín seasoning.
- Add the red onion and cilantro, mixing well to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.

- For a spicier kick, add diced jalapeños.
- This salad can be made a day in advance for better flavor.
- Use fresh corn for the best taste, but frozen corn works well too.
