A delicious and easy no-bake strawberry cheesecake icebox cake that is perfect for summer gatherings.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup powdered sugar
- 16 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
- 2 cups fresh strawberries, sliced
Instructions
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a 9×13 inch baking dish to form the crust.
- In a separate bowl, beat the cream cheese and powdered sugar until smooth.
- In another bowl, whip the heavy cream and vanilla extract until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture until well combined.
- Spread half of the cream cheese mixture over the crust.
- Add a layer of sliced strawberries on top of the cream cheese mixture.
- Spread the remaining cream cheese mixture over the strawberries.
- Top with more sliced strawberries.
- Cover and refrigerate for at least 4 hours or overnight before serving.
Notes
- For a sweeter cake, adjust the amount of powdered sugar to taste.
- Feel free to substitute other fruits like blueberries or raspberries.
- Make sure to use room temperature cream cheese for easier mixing.
