- 1 cup corn (canned or frozen)
- 1 cup black beans (canned, rinsed and drained)
- 1 cup cherry tomatoes, halved
- 1 cup bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Start by preparing all the ingredients and chopping the vegetables.
- In a mason jar, layer the ingredients starting with the corn at the bottom.
- Add the black beans on top of the corn.
- Next, layer the cherry tomatoes, followed by the bell pepper.
- Add the diced avocado and red onion.
- Top with chopped cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad layers in the jar.
- Seal the jar and refrigerate until ready to serve.

- For best flavor, let the salad sit for at least 30 minutes before serving.
