Ingredients

  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed and drained)
  • 1 cup cherry tomatoes, halved
  • 1 cup bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Start by preparing all the ingredients and chopping the vegetables.
  2. In a mason jar, layer the ingredients starting with the corn at the bottom.
  3. Add the black beans on top of the corn.
  4. Next, layer the cherry tomatoes, followed by the bell pepper.
  5. Add the diced avocado and red onion.
  6. Top with chopped cilantro.
  7. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  8. Pour the dressing over the salad layers in the jar.
  9. Seal the jar and refrigerate until ready to serve.
