- 3 lbs beef chuck roast
- 1/4 cup lime juice
- 1/4 cup apple cider vinegar
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp dried oregano
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1–2 jalapeños, chopped (optional)
- 8–10 corn tortillas
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Place the beef chuck roast in the slow cooker.
- In a bowl, mix together lime juice, apple cider vinegar, onion, garlic, cumin, oregano, chili powder, smoked paprika, black pepper, and salt.
- Pour the mixture over the beef in the slow cooker.
- Add chopped jalapeños if using.
- Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
- Once cooked, shred the beef with two forks and mix it with the juices in the slow cooker.
- Warm the corn tortillas in a skillet or microwave.
- Assemble the tacos by placing the shredded beef on the tortillas and garnishing with fresh cilantro and lime juice.
Notes
- For extra flavor, marinate the beef overnight with the spice mixture.
- Serve with your favorite taco toppings like avocado, salsa, or cheese.
- Leftovers can be stored in the refrigerator for up to 3 days.
