Ingredients

  • 3 lbs beef chuck roast
  • 1/4 cup lime juice
  • 1/4 cup apple cider vinegar
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 jalapeños, chopped (optional)
  • 810 corn tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. In a bowl, mix together lime juice, apple cider vinegar, onion, garlic, cumin, oregano, chili powder, smoked paprika, black pepper, and salt.
  3. Pour the mixture over the beef in the slow cooker.
  4. Add chopped jalapeños if using.
  5. Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
  6. Once cooked, shred the beef with two forks and mix it with the juices in the slow cooker.
  7. Warm the corn tortillas in a skillet or microwave.
  8. Assemble the tacos by placing the shredded beef on the tortillas and garnishing with fresh cilantro and lime juice.
