Ingredients

  • 2 ribeye steaks (1.5 inches thick)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. Season the steaks generously with salt and pepper.
  3. Place the steaks on a wire rack over a baking sheet and cook in the oven until they reach an internal temperature of 125°F (52°C) for medium-rare.
  4. Remove the steaks from the oven and let them rest for 10 minutes.
  5. In a skillet, heat olive oil over high heat. Sear the steaks for 1-2 minutes on each side until a crust forms.
  6. In the last minute of cooking, add the butter, garlic, and herbs to the skillet, basting the steaks with the melted butter.
  7. Remove from heat and let the steaks rest for another 5 minutes before slicing.
  8. Serve with the garlic herb butter drizzled on top.
