- 1 cup long-grain rice
- 1 onion, chopped
- 2 cloves garlic, minced

- 2 celery stalks, chopped
- 4 cups vegetable broth

- Salt and pepper to taste
- Optional: 1 cup smoked sausage, sliced
Instructions
- Soak the red beans overnight in water.
- In a large pot, sauté the onion, garlic, bell pepper, and celery until softened.
- Add the soaked beans, vegetable broth, thyme, paprika, salt, and pepper to the pot.
- If using, add the smoked sausage.
- Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender.
- In a separate pot, cook the rice according to package instructions.
- Serve the red beans over the rice.
Notes
- For a vegetarian version, omit the sausage.
