Ingredients

- 2 cups water
- 1 apple, diced
- 1/4 cup walnuts, chopped

Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water, bring to a boil.

- In a large bowl, combine cooled quinoa, diced apple, walnuts, and cranberries.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or chill in the refrigerator for later.
