Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add diced potatoes and vegetable broth, bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Add green peas and cook for an additional 5 minutes.
  6. Stir in heavy cream and season with salt and pepper.
  7. Blend the chowder until smooth, if desired, or leave it chunky.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a vegan version, substitute heavy cream with coconut milk.
