- 1 cup long-grain rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse and soak the red beans overnight.
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, garlic, and bell pepper; sauté until softened.
- Add the soaked red beans, vegetable broth, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add the rice and cook for an additional 20 minutes, or until rice is tender.
