Ingredients

  • 1 lb chicken thighs
  • 2 cups basmati rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can chickpeas, drained
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add chicken thighs and brown on all sides.
  4. Stir in cumin, coriander, paprika, cinnamon, salt, and pepper.
  5. Add rice and stir to coat with spices.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for 20 minutes.
  8. Add chickpeas and cook for an additional 5 minutes.
  9. Fluff rice with a fork and garnish with fresh cilantro before serving.
