Ingredients

- 1 lb chicken thighs
- 2 cups basmati rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can chickpeas, drained
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add chicken thighs and brown on all sides.
- Stir in cumin, coriander, paprika, cinnamon, salt, and pepper.
- Add rice and stir to coat with spices.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Add chickpeas and cook for an additional 5 minutes.
- Fluff rice with a fork and garnish with fresh cilantro before serving.
Notes
- For extra flavor, marinate chicken in spices for a few hours before cooking.
- Serve with a side of yogurt or salad for a complete meal.
