Description

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • Fresh fruit or chocolate for topping (optional)

Instructions

  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add the powdered sugar and vanilla extract, and mix until well combined.
  3. Gently fold in the whipped cream until the mixture is light and fluffy.
  4. In another bowl, combine the graham cracker crumbs and melted butter, mixing until crumbly.
  5. Press the graham cracker mixture into the bottom of mini cupcake liners to form a crust.
  6. Fill each crust with the cheesecake mixture, smoothing the top with a spatula.
  7. Chill in the refrigerator for at least 2 hours before serving.
  8. Top with fresh fruit or chocolate if desired before serving.
