Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup finely chopped pickles
  • 1 tablespoon pickle juice
  • 1 teaspoon smoked paprika
  • Fresh chives for garnish

Instructions

  1. Hard boil the eggs by placing them in a pot, covering with water, and bringing to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
  2. Cool the eggs in ice water for 5 minutes, then peel and slice them in half lengthwise.
  3. Remove the yolks and place them in a mixing bowl. Mash the yolks with a fork.
  4. Add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, chopped pickles, pickle juice, and smoked paprika to the mashed yolks. Mix until smooth.
  5. Fill the egg whites with the yolk mixture using a spoon or piping bag.
  6. Garnish with fresh chives and a sprinkle of smoked paprika before serving.

Notes

  • For a spicier version, add a dash of hot sauce to the yolk mixture.
  • These deviled eggs can be made a day in advance; just keep them covered in the refrigerator.
