Ingredients
- Olive oil – 2 tablespoons
- Garlic – 3 cloves, minced
- Cherry tomatoes – 2 cups, halved
- Red onion – 1, chopped
- Bell peppers – 2, chopped
- Eggplant – 1, diced
- Zucchini – 2, sliced
- Chickpeas – 1 can, drained and rinsed
- Feta cheese – 1 cup, crumbled
- Fresh basil – 1/4 cup, chopped
- Salt – to taste
- Pepper – to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, garlic, cherry tomatoes, red onion, bell peppers, eggplant, zucchini, and chickpeas.
- Season with salt and pepper, then toss to coat.
- Spread the mixture on a baking sheet in a single layer.
- Bake for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from the oven and sprinkle with feta cheese and fresh basil before serving.
Notes
- Feel free to add other vegetables like spinach or artichokes.
- This dish can be served warm or at room temperature.
