- 1 cup diced bell peppers
- 1 cup cooked and crumbled sausage or bacon
- 6 large flour tortillas
- Salt and pepper to taste
- Optional: salsa, avocado, or hot sauce for serving
Instructions
- In a large bowl, whisk together the eggs, salt, and pepper.
- In a skillet, sauté the bell peppers until soft, then add the cooked sausage or bacon.
- Pour the egg mixture into the skillet and cook until the eggs are fully set.
- Remove from heat and stir in the shredded cheese.
- Lay out the tortillas and evenly distribute the egg mixture among them.
- Roll up each tortilla tightly and wrap in foil or plastic wrap.
- Store in the refrigerator or freezer until ready to eat.
- To reheat, microwave for 1-2 minutes if refrigerated or 3-4 minutes if frozen.

- Feel free to customize the filling with your favorite vegetables or proteins.
- These burritos can be frozen for up to 3 months.
- For a vegetarian option, omit the meat and add more veggies.
