- 2 medium sweet potatoes
- 1 lb ground beef
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper to the skillet. Stir and cook for 5-7 minutes.
- Once the sweet potatoes are done, cut them in half and fluff the insides with a fork.
- Top each sweet potato half with the beef mixture, avocado slices, and garnish with fresh cilantro.
- Serve warm and enjoy your protein-packed meal!
