Ingredients

  • 2 medium sweet potatoes
  • 1 lb ground beef
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  4. Add black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper to the skillet. Stir and cook for 5-7 minutes.
  5. Once the sweet potatoes are done, cut them in half and fluff the insides with a fork.
  6. Top each sweet potato half with the beef mixture, avocado slices, and garnish with fresh cilantro.
