Ingredients

  • 2 cans young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 8 small corn tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Add minced garlic and cook for another minute.
  4. Stir in the jackfruit, cumin, smoked paprika, chili powder, salt, and pepper.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Cook for about 20-25 minutes, stirring occasionally, until the jackfruit is tender and can be shredded with a fork.
  7. While the jackfruit cooks, warm the corn tortillas in a separate pan.
  8. Once the jackfruit is ready, shred it with a fork and mix well with the sauce.
  9. Assemble the tacos by placing the jackfruit mixture on the tortillas and garnishing with fresh cilantro and lime juice.
