- 1 cup pumpkin puree
- 2 cups sugar
- 1/2 cup butter
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 2 cups white chocolate chips
- 1 cup chopped nuts (optional)
Instructions
- In a saucepan, combine pumpkin puree, sugar, butter, and evaporated milk over medium heat.
- Stir continuously until the mixture comes to a boil.
- Boil for 5 minutes, stirring constantly.
- Remove from heat and stir in vanilla extract, pumpkin pie spice, and white chocolate chips until melted and smooth.
- If desired, fold in chopped nuts.
- Pour the mixture into a greased 9×9 inch pan and spread evenly.
- Let it cool at room temperature until set, then cut into squares.
Notes
- Store fudge in an airtight container at room temperature for up to a week.
- For a richer flavor, use dark chocolate chips instead of white chocolate.
- Can be made ahead of time and frozen for later use.
