- 2 cups fresh blueberries
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 pie crust (store-bought or homemade)
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
- Pour the blueberry mixture into the pie crust.
- In another bowl, mix flour, oats, brown sugar, melted butter, and cinnamon until crumbly.
- Sprinkle the crumble mixture over the blueberries in the pie.
- Bake in the preheated oven for 45-50 minutes or until the crumble is golden brown and the blueberries are bubbling.
- Let it cool before serving.
Notes
- Serve with whipped cream or vanilla ice cream for extra indulgence.
- Can be made with frozen blueberries if fresh ones are not available.
- Store leftovers in the refrigerator for up to 3 days.
