Instructions
- Turn on the Instant Pot and select the ‘Sauté’ function.
- Add olive oil and diced chicken breast, cooking until browned.
- Add garlic powder, onion powder, salt, and pepper, stirring to combine.
- Pour in the rice and chicken broth, then add the mixed vegetables.
- Close the lid and set the valve to sealing.
- Select the ‘Manual’ or ‘Pressure Cook’ function and set the timer for 8 minutes.
- Once cooking is complete, perform a quick release of the pressure.
- Open the lid, fluff the rice, and serve hot.
Notes
- Feel free to substitute chicken with tofu for a vegetarian option.
