Ingredients

  • 4 large whole wheat tortillas
  • 8 large eggs
  • 1 cup cooked and crumbled turkey sausage
  • 1 cup shredded low-fat cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup salsa
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together the eggs, salt, and pepper.
  2. In a skillet over medium heat, scramble the eggs until fully cooked.
  3. Add the cooked turkey sausage, spinach, and tomatoes to the eggs and mix well.
  4. Lay a tortilla flat and place a portion of the egg mixture in the center.
  5. Sprinkle cheese on top of the egg mixture.
  6. Fold the sides of the tortilla over the filling, then roll it up tightly to form a wrap.
  7. Repeat with the remaining tortillas and filling.
  8. In the same skillet, place the wraps seam-side down and cook until golden brown on both sides.
