- 1 cup black beans, cooked and mashed
- 1 cup quinoa, cooked
- 1/2 cup breadcrumbs
- 1/2 cup corn, canned or frozen
- 1/4 cup red onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- In a large bowl, combine the black beans, quinoa, breadcrumbs, corn, red onion, bell pepper, garlic, cumin, chili powder, salt, and pepper.
- Mix until well combined and form into patties.
- Heat olive oil on a grill or grill pan over medium heat.
- Grill the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
- Serve with your choice of buns and toppings.
