Ingredients

  • 4 Italian sausages
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 4 hoagie rolls
  • Salt and pepper to taste
  • Optional: provolone cheese, for topping

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, toss the sliced peppers and onion with olive oil, salt, and pepper.
  3. Grill the sausages for about 10-12 minutes, turning occasionally until cooked through.
  4. While the sausages are grilling, place the peppers and onions in a grill basket and grill for about 5-7 minutes until tender.
  5. Slice the hoagie rolls and toast them lightly on the grill.
  6. Assemble the hoagies by placing the grilled sausages in the rolls, topping with the grilled peppers and onions.
  7. Add provolone cheese if desired, and serve hot.

Notes

  • Feel free to use any type of sausage you prefer.
  • For a spicier kick, add some sliced jalapeños.
  • This recipe can be easily doubled for a larger crowd.
