- 2 ripe peaches, diced
- 1/4 cup red onion, finely chopped

- 1 cup rolled oats
- 2 cups almond milk
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine diced peaches, red onion, cilantro, and lime juice to make the salsa.
- Season the pork chops with salt and pepper, then grill for about 6-7 minutes on each side or until cooked through.
- In a separate bowl, mix rolled oats, almond milk, honey, vanilla extract, and cinnamon. Refrigerate overnight.
- Serve the grilled pork chops topped with peach salsa alongside the overnight oats.

- For a spicier salsa, add jalapeño to the peach mixture.
