Ingredients

- 1 ripe pineapple, peeled and cored
- 2–3 fresh jalapeños, halved and seeded
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt to taste
Instructions
- Preheat the grill to medium-high heat.
- Cut the pineapple into rings and grill for about 3-4 minutes on each side until caramelized.
- Grill the jalapeños for 2-3 minutes until slightly charred.
- Remove the pineapple and jalapeños from the grill and let them cool.
- Chop the grilled pineapple and jalapeños into small pieces.
- In a bowl, combine the chopped pineapple, jalapeños, red onion, cilantro, lime juice, and salt.
- Toss everything together and adjust seasoning if necessary.
- Serve immediately or refrigerate for an hour to let the flavors meld.
Notes
- For a milder salsa, use fewer jalapeños or remove the seeds.
- This salsa pairs well with grilled meats, tacos, or as a dip with tortilla chips.
