Coq au Vin is a classic French dish made with chicken braised slowly in red wine, along with mushrooms, onions, and bacon, resulting in a rich and flavorful meal.

- 1 whole chicken, cut into pieces
- 4 cups red wine
- 1 cup chicken broth
- 4 ounces bacon, diced
- 1 cup pearl onions
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, marinate the chicken pieces in red wine for at least 2 hours, preferably overnight.
- In a large Dutch oven, cook the diced bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add the marinated chicken pieces and brown them on all sides. Remove and set aside.
- Add the pearl onions and mushrooms to the pot, cooking until softened.
- Stir in the garlic and cook for an additional minute.
- Add the tomato paste and flour, stirring to combine.
- Return the chicken and bacon to the pot, then pour in the chicken broth and the reserved marinade.
- Add thyme, bay leaf, salt, and pepper. Bring to a simmer.
- Cover and cook on low heat for about 1.5 to 2 hours, until the chicken is tender.
- Remove the bay leaf and serve hot, garnished with fresh parsley.
Notes
- For best results, use a good quality red wine.
- This dish can be made a day in advance, as the flavors improve overnight.
- Serve with crusty bread or over mashed potatoes for a complete meal.
