Description

Coq au Vin is a classic French dish made with chicken braised slowly in red wine, along with mushrooms, onions, and bacon, resulting in a rich and flavorful meal.


Ingredients

  • 1 whole chicken, cut into pieces
  • 4 cups red wine
  • 1 cup chicken broth
  • 4 ounces bacon, diced
  • 1 cup pearl onions
  • 2 cups mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, marinate the chicken pieces in red wine for at least 2 hours, preferably overnight.
  2. In a large Dutch oven, cook the diced bacon over medium heat until crispy. Remove and set aside.
  3. In the same pot, add the marinated chicken pieces and brown them on all sides. Remove and set aside.
  4. Add the pearl onions and mushrooms to the pot, cooking until softened.
  5. Stir in the garlic and cook for an additional minute.
  6. Add the tomato paste and flour, stirring to combine.
  7. Return the chicken and bacon to the pot, then pour in the chicken broth and the reserved marinade.
  8. Add thyme, bay leaf, salt, and pepper. Bring to a simmer.
  9. Cover and cook on low heat for about 1.5 to 2 hours, until the chicken is tender.
  10. Remove the bay leaf and serve hot, garnished with fresh parsley.

Notes

  • For best results, use a good quality red wine.
  • This dish can be made a day in advance, as the flavors improve overnight.
  • Serve with crusty bread or over mashed potatoes for a complete meal.
