Ingredients

- 1 cup quinoa, cooked
- 1 cup roasted sweet potatoes, cubed
- 1 cup kale, chopped
- 1/2 cup chickpeas, cooked
- 1/4 cup feta cheese, crumbled
- 1/4 cup pumpkin seeds
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, and pepper, and roast for 25-30 minutes until tender.
- In a large bowl, combine cooked quinoa, roasted sweet potatoes, kale, chickpeas, feta cheese, and pumpkin seeds.
- Drizzle with balsamic vinegar and toss to combine.
- Serve warm or at room temperature.
Notes
- Feel free to add other seasonal vegetables.
- This bowl can be made ahead and stored in the fridge for up to 3 days.
- For a vegan option, omit the feta cheese.
