- 4 chicken thighs
- 4 chicken drumsticks
- 2 cups of mixed vegetables (bell peppers, zucchini, and red onion)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Add the chicken pieces to the bowl and coat them well with the marinade.
- Place the Bundt pan upside down on a baking sheet.
- Arrange the marinated chicken around the Bundt pan and place the mixed vegetables in the center.
- Roast in the preheated oven for 45-50 minutes or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven and let it rest for a few minutes before serving.
