- 1 cup strawberries, sliced
- 1 cup blueberries
- 1 cup raspberries
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 pie crust (store-bought or homemade)
- 1 tablespoon butter, cut into small pieces
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the strawberries, blueberries, raspberries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
- Pour the berry mixture into the pie crust and dot with butter.
- Cover with a second pie crust or create a lattice top. Seal the edges.
- Cut slits in the top crust to allow steam to escape.
- Bake for 25-30 minutes or until the crust is golden brown and the filling is bubbly.
- Let cool before serving.
Notes
- Serve with whipped cream or vanilla ice cream for added flavor.
- Can be made a day in advance and stored in the refrigerator.
