- 1 tablespoon orange zest
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the orange juice, vegetable oil, vanilla extract, and orange zest.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the fresh cranberries gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, mix powdered sugar with a little orange juice until smooth and drizzle over the cooled loaf.
