Delicious and healthy blueberry oatmeal crumble bars that are perfect for breakfast or a snack.
Ingredients

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 cups fresh blueberries
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together oats, flour, brown sugar, melted butter, cinnamon, and salt until crumbly.
- Press half of the mixture into the bottom of a greased baking pan.
- In another bowl, combine blueberries, lemon juice, and cornstarch. Spread the blueberry mixture over the crust.
- Sprinkle the remaining oat mixture on top of the blueberries.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
- Store in an airtight container for up to a week.
- Can be made with frozen blueberries if fresh are not available.
- For a vegan option, substitute butter with coconut oil.
