Delicious blueberry crumble bars with a buttery crust and a sweet blueberry filling, perfect for dessert or a snack.
Ingredients

- 2 cups fresh blueberries
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup rolled oats
- ½ cup brown sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix blueberries, granulated sugar, lemon juice, and cornstarch. Set aside.
- In another bowl, combine flour, baking powder, and salt.
- In a separate bowl, cream together butter, brown sugar, and oats until well combined.
- Add the flour mixture to the butter mixture and mix until crumbly.
- Press half of the crumble mixture into the bottom of a greased baking pan.
- Spread the blueberry mixture over the crust.
- Sprinkle the remaining crumble mixture on top of the blueberries.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
- For a vegan option, substitute butter with coconut oil.
- These bars can be stored in an airtight container for up to a week.
- Serve with whipped cream or ice cream for an extra treat.
