Ingredients

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup diced red onion
- 1/4 cup diced celery
- 1/4 cup diced bell pepper
- 1/4 cup sweet pickle relish
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- Cook the elbow macaroni according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine mayonnaise, sour cream, Dijon mustard, salt, and pepper.
- Add the cooled macaroni to the dressing and mix well.
- Stir in the diced red onion, celery, bell pepper, sweet pickle relish, and parsley.
- Taste and adjust seasoning if necessary.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
Notes
- For a healthier version, you can use Greek yogurt instead of mayonnaise.
- Add diced cooked ham or chicken for extra protein.
