Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add carrots and celery, cook for about 5 minutes.
  4. Add zucchini and bell pepper, stir well.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
  7. Blend the soup until smooth using an immersion blender or regular blender.
  8. Stir in heavy cream or coconut milk, and season with salt and pepper.
  9. Heat through and serve hot, garnished with fresh herbs if desired.

Notes
