Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add cubed butternut squash, cooked lentils, cumin, ginger, salt, and pepper.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 20-25 minutes until squash is tender.
- Use an immersion blender to puree the soup until smooth.
- Serve hot, garnished with fresh parsley.
