- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 (8 oz) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 cups fresh cranberries
- 1 cup pecans, chopped
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and eggs, one at a time, mixing well after each addition.
- Fold in cranberries and pecans, then pour the mixture over the crust.
- Bake for 55-60 minutes or until the center is set.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- For a sweeter cheesecake, increase the sugar to taste.
- Can be topped with additional cranberries and pecans before serving.
- Store leftovers in the refrigerator for up to 5 days.
