Ingredients

- 1 cup of dates, pitted
- 1/2 cup of almond butter
- 1/4 cup of cocoa powder
- 1/4 cup of collagen peptides
- 1/4 cup of rolled oats
- 1/4 cup of shredded coconut
- 1/4 cup of chocolate chips
- 1 tsp of vanilla extract
- Pinch of salt
Instructions
- In a food processor, combine the dates and almond butter until smooth.
- Add cocoa powder, collagen peptides, rolled oats, shredded coconut, chocolate chips, vanilla extract, and salt. Process until well combined.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to a week.
Notes
- Feel free to substitute almond butter with any nut or seed butter of your choice.
- For a sweeter taste, add a bit of honey or maple syrup.
