Ingredients

  • 2 pounds chicken bones
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, smashed
  • 2 tablespoons apple cider vinegar
  • 10 cups water
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roast the chicken bones in the oven for 30 minutes until browned.
  3. In a large pot, combine the roasted bones, onion, carrots, celery, garlic, apple cider vinegar, and water.
  4. Bring the mixture to a boil, then reduce to a simmer.
  5. Simmer for at least 6 hours, or up to 24 hours for a richer flavor.
  6. Strain the broth through a fine mesh sieve into a large bowl.
  7. Let the broth cool, then pour it into ice cube trays and freeze.
  8. Once frozen, transfer the broth cubes to a freezer bag for easy storage.
