Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs

  • 2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1/3 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted butter, milk, eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Gently fold in the blueberries.
  6. In a separate bowl, prepare the streusel by mixing brown sugar, oats, flour, and cinnamon. Cut in the cold butter until crumbly.
  7. Fill the muffin cups with the batter and sprinkle the streusel topping on each muffin.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before serving.

  • For best results, use fresh blueberries.
