A refreshing and easy-to-make dessert featuring layers of creamy lemon filling and fresh blueberries, perfect for summer gatherings.

- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup powdered sugar
- 8 oz cream cheese, softened
- 1 cup lemon juice
- 1 cup heavy whipping cream
- 2 cups fresh blueberries
Instructions
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a 9×13 inch dish.
- In a separate bowl, beat together the powdered sugar and cream cheese until smooth.
- Add lemon juice to the cream cheese mixture and mix until well combined.
- In another bowl, whip the heavy cream until stiff peaks form, then fold it into the lemon mixture.
- Spread half of the lemon filling over the crust, then layer half of the blueberries on top.
- Repeat the layers with the remaining lemon filling and blueberries.
- Cover and refrigerate for at least 4 hours or overnight before serving.
Notes
- For a sweeter dessert, adjust the amount of powdered sugar to taste.
- Can be made a day in advance for convenience.
- Garnish with additional blueberries or lemon zest before serving.
