Description

A refreshing and easy-to-make dessert featuring layers of creamy lemon filling and fresh blueberries, perfect for summer gatherings.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 cup lemon juice
  • 1 cup heavy whipping cream
  • 2 cups fresh blueberries

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a 9×13 inch dish.
  2. In a separate bowl, beat together the powdered sugar and cream cheese until smooth.
  3. Add lemon juice to the cream cheese mixture and mix until well combined.
  4. In another bowl, whip the heavy cream until stiff peaks form, then fold it into the lemon mixture.
  5. Spread half of the lemon filling over the crust, then layer half of the blueberries on top.
  6. Repeat the layers with the remaining lemon filling and blueberries.
  7. Cover and refrigerate for at least 4 hours or overnight before serving.

Notes

  • For a sweeter dessert, adjust the amount of powdered sugar to taste.
  • Can be made a day in advance for convenience.
