Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 8 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup acini di pepe pasta

Instructions

  1. In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, bring chicken broth to a boil over medium heat.
  3. Add the meatballs to the boiling broth and cook for about 10 minutes.
  4. Add diced carrots and celery, and simmer for another 10 minutes.
  5. Add the acini di pepe pasta and cook until al dente, about 8 minutes.
  6. Stir in the fresh spinach and cook until wilted.
  7. Season with additional salt and pepper to taste before serving.
