- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 8 cups chicken broth
- 2 cups fresh spinach
- 1 cup diced carrots
- 1 cup diced celery
- 1/2 cup acini di pepe pasta
Instructions
- In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring chicken broth to a boil over medium heat.
- Add the meatballs to the boiling broth and cook for about 10 minutes.
- Add diced carrots and celery, and simmer for another 10 minutes.
- Add the acini di pepe pasta and cook until al dente, about 8 minutes.
- Stir in the fresh spinach and cook until wilted.
- Season with additional salt and pepper to taste before serving.
Notes
- For a richer flavor, use homemade chicken broth.
- Feel free to add other vegetables like zucchini or green beans.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
