A delightful berry compote that adds a burst of flavor to pancakes and waffles.

- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, combine the mixed berries and sugar over medium heat.
- Stir gently until the sugar dissolves and the berries start to release their juices.
- Add the lemon juice and vanilla extract, and continue to cook for about 5-7 minutes until the mixture thickens slightly.
- Remove from heat and let it cool slightly before serving.
- Serve warm over pancakes or waffles.

- Feel free to use any combination of berries you prefer.
- This compote can be stored in the refrigerator for up to a week.
- For a thicker consistency, cook a little longer.
