Instructions
- Soak the dried beans overnight in water.
- Drain and rinse the beans, then set aside.
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add the soaked beans, vegetable broth, cumin, and smoked paprika.
- Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
