Description

Delicious and hearty BBQ jackfruit sandwiches that are perfect for a vegan meal.


Ingredients

  • 2 cans young green jackfruit in water or brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup BBQ sauce
  • Salt and pepper to taste
  • 4 whole grain buns
  • Coleslaw (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add the drained jackfruit to the skillet, breaking it apart with a fork or your hands.
  5. Stir in the BBQ sauce, and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally.
  6. Transfer the jackfruit mixture to a baking dish and bake for 20 minutes.
  7. While the jackfruit is baking, prepare the coleslaw if using.
  8. Once done, remove from the oven and assemble the sandwiches by placing the BBQ jackfruit on the buns and topping with coleslaw if desired.

Notes

  • Make sure to use young green jackfruit, not ripe jackfruit.
  • Feel free to adjust the amount of BBQ sauce to your taste.
  • These sandwiches can be served with pickles or extra BBQ sauce on the side.
