Delicious and hearty BBQ jackfruit sandwiches that are perfect for a vegan meal.
Ingredients

- 2 cans young green jackfruit in water or brine, drained and rinsed
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup BBQ sauce
- Salt and pepper to taste
- 4 whole grain buns
- Coleslaw (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Add minced garlic and cook for another minute.
- Add the drained jackfruit to the skillet, breaking it apart with a fork or your hands.
- Stir in the BBQ sauce, and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally.
- Transfer the jackfruit mixture to a baking dish and bake for 20 minutes.
- While the jackfruit is baking, prepare the coleslaw if using.
- Once done, remove from the oven and assemble the sandwiches by placing the BBQ jackfruit on the buns and topping with coleslaw if desired.
Notes
- Make sure to use young green jackfruit, not ripe jackfruit.
- Feel free to adjust the amount of BBQ sauce to your taste.
- These sandwiches can be served with pickles or extra BBQ sauce on the side.
