Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 4 flatbreads
  • 1 cup shredded mozzarella cheese
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup cilantro, chopped
  • Olive oil for brushing

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper, then grill for about 6-7 minutes per side until fully cooked.
  3. Remove the chicken from the grill and let it rest for a few minutes before shredding it.
  4. In a bowl, mix the shredded chicken with BBQ sauce until well coated.
  5. Brush the flatbreads with olive oil on both sides.
  6. Place the flatbreads on the grill and cook for 2-3 minutes until they start to get grill marks.
  7. Flip the flatbreads, then top with the BBQ chicken, mozzarella cheese, and red onion.
  8. Close the grill lid and cook for an additional 3-5 minutes until the cheese is melted.
