- 1 lb boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 4 flatbreads
- 1 cup shredded mozzarella cheese
- 1/2 cup red onion, thinly sliced
- 1/2 cup cilantro, chopped
- Olive oil for brushing
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper, then grill for about 6-7 minutes per side until fully cooked.
- Remove the chicken from the grill and let it rest for a few minutes before shredding it.
- In a bowl, mix the shredded chicken with BBQ sauce until well coated.
- Brush the flatbreads with olive oil on both sides.
- Place the flatbreads on the grill and cook for 2-3 minutes until they start to get grill marks.
- Flip the flatbreads, then top with the BBQ chicken, mozzarella cheese, and red onion.
- Close the grill lid and cook for an additional 3-5 minutes until the cheese is melted.
- Remove from the grill, sprinkle with cilantro, slice, and serve.
