- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 ripe bananas, mashed
- 1 package instant vanilla pudding mix
- 2 cups milk
- 1 cup whipped cream
- Banana slices for garnish
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and eggs, one at a time, mixing well after each addition.
- Stir in sour cream and mashed bananas until well combined.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set.
- Let the cheesecake cool, then refrigerate for at least 4 hours or overnight.
- Prepare the instant vanilla pudding according to package instructions and fold in whipped cream.
- Spread the pudding mixture over the chilled cheesecake and garnish with banana slices.
Notes
- For best results, use ripe bananas for more flavor.
- Make sure the cream cheese is at room temperature for a smoother batter.
- This cheesecake can be made a day in advance for better flavor.
