- 6 large eggs
- 1 cup asparagus, chopped
- 1/2 cup goat cheese, crumbled
- 1/4 cup milk
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- In an oven-safe skillet, heat olive oil over medium heat and add the chopped asparagus. Sauté for about 3-4 minutes until tender.
- Pour the egg mixture over the asparagus in the skillet.
- Sprinkle the crumbled goat cheese on top.
- Cook on the stovetop for 2-3 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is set and lightly golden.
- Remove from the oven, let cool slightly, and slice to serve.
Notes
- Feel free to add other vegetables like spinach or bell peppers.
- For a richer flavor, use aged goat cheese.
- Store leftovers in the refrigerator for up to 3 days.
