Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 cup spinach, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, garlic, and ginger; sauté until onion is translucent.
- Stir in turmeric and cumin, cooking for another minute.
- Add chicken broth, carrots, and celery; bring to a boil.
- Reduce heat and simmer for 15 minutes until vegetables are tender.
- Stir in shredded chicken and spinach; cook until spinach is wilted.
- Season with salt and pepper to taste before serving.
Notes
- For a vegetarian version, substitute chicken with chickpeas.
- Can be stored in the refrigerator for up to 3 days.
- Freezes well for up to 2 months.
